Badge in Advanced Craft Brewing

This badge is designed to give students advanced knowledge and skills associated with beer brewing and product evaluation. The badge will focus on the more advanced methods of beer brewing, packaging and sanitation, as well as an evaluation of ingredients and the final beer product.

Students will become competent in each step in the brewing process, including milling, mashing and lautering, boiling, fermentation, packaging, cleaning and sanitation. Students will also develop skills in detection of contamination, yeast isolation and culture, assessing yeast metabolism and viability, and assessing the raw materials and final product according to the American Society of Brewing Chemists (ASBC). Finally, students will develop beer recipes according to industry specifications using raw ingredients and perform a sensory analysis and assess beers according to the Beer Judge Certification program (BJCP).
