Serves: 1-2
Ingredients

4 oz pasta of choice (angel hair, chickpea, veggie)

2 tbsp of olive oil
-
4 tbsp butter or butter substitute

1-2 tbsp minced garlic
-
1/2 tsp black pepper
-
1-2 tsp crushed red pepper
-
1/2 pound raw shrimp, peeled and thawed (can substitute with chicken, white fish, or tofu)

1/4 cup lemon juice
-
1/4 cup pasta water
-
optional: grated parmesan cheese
-
optional: dried parsley
Directions
- Cook pasta as directed, saving ½ cup of pasta water before draining
- Heat olive oil and butter in a saucepan over medium heat. Saute minced garlic, crushed red pepper and black pepper for 1-2 minutes until fragrant.
- Add shrimp and lemon juice, and cook until pink.
- Add cooked pasta, pasta water and stir until well combined. Simmer for 1-2 minutes.
- Serve scampi in a bowl and top with grated parmesan cheese and parsley if desired.
